Any idea how much wire is needed? I can't remember how many grounds there are... I know there's a valve cover ground, a transmission ground, and a thermostat ground. Is that all that needs to be replaced?? What about the ground coming off the battery? That should probably be replaced as well right?

Ground straps are usually short but the one from the battery to the starter is the main one and is usually a foot or two if the battery is up front.
I kinda think 4/0 gauge welding cable oughta do it.
