Services and reminders

I'm having some trouble with services and reminders. It *looks* to me like there is a master list of services and in this list I can set default reminders.

Further, I think I can override reminders for specific vehicles. But, it looks to me like I can only do that for services that already have a reminder listed. If, say, Engine Coolant, doesn't have a current reminder for my Civic I can't change the reminder interval for that car. Is that correct?

Also, I don't seem to be able to change a reminder to not fire again (Tire Pressure, for example).

What am I not understanding here?
